Spinach Garlic Curry

A rich spinach curry finished with golden garlic, butter and cream. Simple, comforting and ready in minutes.
Ingredients
- 100g frozen spinach, thawed, chopped and squeezed
- 20g fresh garlic, peeled and sliced
- 1 tbsp oil
- 1 packet Banarasi Spinach Curry
- 2 tsp butter
- 2 tsp fresh cream
- 250ml water
- 1 tbsp fresh coriander, chopped
Method
1. Sauté garlic in oil for 1 minute on medium-high heat until golden brown.
2. Add spinach and sauté for 1 minute. Remove and keep aside.
3. In the same pan, heat 250ml water. Empty the full sachet into the pan and mix well.
4. Bring to a gentle simmer.
5. Add cream and butter. Add the sautéed spinach and garlic. Cook for 2–3 minutes.
6. Adjust salt and spice if required. Add 30ml water if you want it thinner.
7. Garnish with coriander and serve hot with rice or Indian bread.
Best served with
Steamed rice, naan, roti or garlic bread.
